Tuna & Sweetcorn Pasta (94p/portion)

Tuna sweetcorn pasta

Want a healthy and tasty pasta in 15 minutes? This 2 ingredient pasta dish uses a hack of utilising pre-prepared tuna sandwich mix. It can be enjoyed straight away nice and warm, or refrigerated (for up to 2 days) to be eaten cool on a warm day to cool you down from the inside.

I’m on a not so secret mission to show people that they can eat mostly organic without breaking the bank. Let me know if you like this one in the comments and what you think of the cost per portion.

KEY FACTS:

  • Time: 15 minutes assuming you have all the ingredients
  • Difficulty: Easy

INGREDIENTS:

4 portions from:

  • 450g Organic Penne Pasta – £1.22 (£1.35 for 500g from Sainsburys).
  • 385g Tuna & Sweetcorn Sandwich Mix – £2.54 (Tuna & Sweetcorn Deli Filler 385g from Sainsburys, which is a great time saver and no additives, and highly rated on Yuka)
  • * (Optional) 1/2 Teaspoon Parsley
  • *(Optional) Any additional seasoning you may like to add, such as sea salt and pepper.

*Not included in the per person or per serving cost calculation. This is as the cost is very low (pennies) or negligible. Also most people will already have these ingredients readily available in their kitchens.

METHOD:

  1. Cook 450g Penne Pasta (or any pasta of your choosing) in a pan of boiling water until cooked to your liking (typically 8-13 minutes for al-dente to fully cooked and soft).
  2. Once cooked fully drain then add the full tub of 385g Tuna & Sweetcorn Sandwich Mix and mix well until the pasta is evenly covered in the tuna mix.
  3. Dish into glass containers and refrigerate for eating later for a cool pasta (perfect on hot days) or eat immediately as a family of 4 (or do a mix of both for a couple).
  4. Enjoy 🙂
